Sugar-Free Holiday Gingerbread Cookies

Ingredients (makes approx. 20 cookies)

  • 2 cups almond flour

  • ⅓ cup brown-style erythritol or monk fruit sweetener

  • 1 tsp ground ginger

  • 1 tsp ground cinnamon

  • ¼ tsp ground cloves

  • ½ tsp baking soda

  • ¼ tsp salt

  • ¼ cup unsalted butter, melted

  • 1 large egg

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.

  2. In a bowl, mix almond flour, sweetener, spices, baking soda, and salt.

  3. Stir in melted butter, egg, vanilla, and molasses (if using).

  4. Chill dough 20–30 minutes until firm enough to roll.

  5. Roll dough to ¼-inch thickness and cut shapes.

  6. Bake 8–10 minutes until just set.

  7. Cool completely before icing.

  • Molasses is optional but dramatically improves authenticity:

  • 1 tbsp unsulphured blackstrap molasses (adds minimal sugar per cookie)
